why does human male semen have a jelly like consistency?

Human semen should not be of jelly consistency. Of course, not all men are created equal (quite the opposite, actually), so semen texture varies between men. For example, I myself am cursed with the incredibly liquid-like (almost like water) semen, while others have it looking almost like sour-cream.

By experimenting (for profesional reasons) with various ways to change the consistency of my own semen, I did discover that the earlier portion of my ejaculate seems to be thicker and more like a "paste" than the later part which often reverts back to the more transparent, liquid-like texture.

Having been part of the adult-film buisness for years now, I have seen alot of different types of male semen, and yes, some of them appear to be more of a thick, white jelly texture, which would be normal, I imagine.

Like I said, us males are NOT all created equal!
