Because we have memory cells.
The thing that is needed is the initial immune response, then our cells have specific cells that remember in the future, and those cells from that point on can mount a response to the now known bad buggie.
The immune response lasts considerably longer for many, and not so long for others. There are some vaccines that need to be renewed now and then. Tetanus is one such..it's good idea to revaccinate against tetanus every ten years.
